By boiling quality pasta shapes in water infused with dried butterfly pea flowers, the noodles absorb a mesmerizing, deep azure tint without changing their classic savoury profile. Tossed gently in a silky garlic-butter reduction and finished with a shower of cracked black pepper, this modern bowl provides an unforgettable visual contrast that will delight any guest.
200g pasta (such as spaghetti, fettuccine, or rigatoni)  12-15 dried butterfly pea flowers (for the natural blue extract)  2 tbsp unsalted premium butter  3 cloves garlic, sliced paper-thin  1/4 tsp freshly cracked black pepper  Salt to taste and a few fresh basil leaves for garnish
Bring a large pot of salted water to a rolling boil, drop the dried butterfly pea flowers into the liquid, and let them steep for 3 minutes until the water turns an intense, deep blue hue.
Strain out the spent flower petals, drop your chosen pasta into the vibrant blue water, and cook according to the package instructions until perfectly al dente.
Melt the unsalted butter in a wide frying pan over medium-low heat, slide the thin garlic slices in, and sauté very gently for 1 to 2 minutes until translucent and aromatic without browning.
Drain the brilliant blue pasta, reserving a splash of the blue cooking water, then toss the noodles directly into the garlic butter, adding a splash of the starch water and cracked black pepper to create a glossy emulsion before serving.
