Before the mango season ends, celebrate it with a creamy no-bake mango custard tart that feels light, is refreshing, and is also very easy to make at home. With a base made of buttery biscuits and a topping made of juicy mangoes, it's the perfect dessert to try your hand at without turning on the oven.
200 g digestive biscuits, crushed 80 g melted butter 2 cups milk 3 tbsp vanilla custard powder 3 tbsp sugar 2 ripe mangoes, diced ½ tsp vanilla essence 2 tbsp chopped pistachios (optional) Mint leaves for garnish (optional)
Crush the biscuits and mix them nicely with melted butter. Press it firmly into a tart tin or pie dish and refrigerate for about 15 to 20 minutes to let it set.
In a bowl, whisk the custard powder with a little cold milk. Heat the remaining milk with some sugar, then mix in the custard slurry and cook until it turns thick and smooth.
Let the custard cool down a bit and then add vanilla essence to it to enhance the taste. Pour this over the chilled biscuit base, spread it evenly and refrigerate for at least two hours.
Chop the mangoes and arrange them over the chilled custard, covering the entire base.
Sprinkle some chopped nuts and garnish with mint leaves if preferred. Slice the tart and serve chilled for a creamy dessert treat.
