Gond laddu is a classic winter sweet prepared with edible gum, ghee, nuts and jaggery. These energy-rich ladoos add crunch and warmth to your winter menu, making them a popular homemade treat during colder months. These ladoos also help keep the body warm from within on chilly winter days.
1 cup edible gond (edible gum) 1 cup whole wheat flour ¾ cup powdered jaggery ½ cup ghee ¼ cup almonds, chopped ¼ cup cashews, chopped 2 tbsp raisins 2 tbsp desiccated coconut 1 tsp cardamom powder ¼ tsp dry ginger powder 2 tbsp melon seeds (optional)
In a heavy-bottomed pan, heat ghee and fry gond in small batches. Let each batch puff fully, then remove and crush coarsely.
In the same pan, roast the chopped almonds, cashews and melon seeds until they turn lightly golden. Set them aside to maintain their crunch.
To the remaining ghee, add wheat flour and roast on a low flame, stirring constantly until you get a nutty fragrance and it appears golden.
To this, now add crushed gond, roasted nuts, raisins, coconut, cardamom and dry ginger powder. Mix everything well while the flour mixture is still warm.
Switch off the flame and add powdered jaggery to this. Mix everything well until evenly combined, then shape into small ladoos while the mixture is warm enough to hold together.
