Gond Ke Ladoo Recipe: North Indian Nutritious Ladoos To Fight Winter Chill

 Gond ke ladoo are a winter superfood delight prepared by mixing roasted edible gum, whole wheat flour, ghee, and nuts. These ladoos keep the body warm, boost stamina, and maintain energy levels during cold days and postpartum recovery.

Ingredients

1 cup gond (edible gum) 2 cups whole wheat flour 1 cup ghee ¾ cup jaggery powder or sugar ½ cup almonds (chopped) ½ cup cashews (chopped) ¼ cup walnuts (optional) 2 tbsp raisins 1 tsp cardamom powder

Step 1

In a pan, heat ghee and fry gond on a low flame until it puffs up. Remove it from the pan, let it cool, and crush it into small, crunchy pieces.

Step 2

Add the chopped nuts like almonds, cashews, walnuts, and raisins to the remaining ghee. Roast until they turn golden and aromatic. 

Step 3

Add wheat flour to this and roast slowly, stirring constantly until it turns light brown and starts releasing aroma.

Step 4

Turn off the flame and mix the crushed gond and raisins. Mix everything while the mixture is still warm.

Step 5

Once the mixture turns lukewarm, add the jaggery powder and the cardamom powder or pods. Mix it thoroughly so the sweetness mixes without melting into gluey lumps.

Step 6

Start making ladoos from the warm mixture. Let them cool thoroughly and store them in an airtight box to maintain their crisp texture and long shelf life.
