Gond ke laddu are a traditional winter sweet prepared in Indian homes to keep the body warm and boost stamina. Loaded with edible gum, nuts, ghee, and whole wheat, these laddus are ideal for new mothers, growing kids, and anyone who needs energy during cold winter months.
1 cup gond (edible gum) 2 cups whole wheat flour 1 cup powdered jaggery ¾–1 cup ghee (as needed) ½ cup chopped almonds ¼ cup chopped cashews 2 tbsp raisins 1 tsp cardamom powder 2 tbsp grated dry coconut (optional)
In a pan, heat ½ cup ghee on a low flame. Fry the fries in batches until it is puffed and crisp. Cool it down and crush coarsely.
In the remaining ghee, roast 2 cups of wheat flour over a low flame until it turns golden and aromatic.
To the roasted wheat, add chopped almonds, cashews, raisins, and some grated dry coconut. Roast for an additional 2–3 minutes, until the nuts become slightly crunchy.
Switch off the flame and add crushed gond and cardamom powder. Mix nicely so that everything is combined while the mixture is still warm.
Add the jaggery powder to the warm mixture and mix thoroughly so the jaggery melts a bit and holds all ingredients in a soft, coarse dough.
While the mixture is still warm, grease your palms with ghee and start making small bite-sized ladoos. Let it cool completely, and then store it in an airtight box.
