Serradura, meaning “sawdust” in Portuguese, gets its name from the fine biscuit crumbs layered into this creamy dessert. Popular in Goa due to Portuguese influence, it is a chilled, no-bake pudding made with whipped cream and crushed biscuits. The texture should be smooth, lightly sweet and softly set after refrigeration. It is typically served in individual glasses and improves after resting for a few hours.
1 cup chilled heavy whipping cream ½ cup condensed milk 12–14 Marie or digestive biscuits, finely crushed ½ tsp vanilla extract
Whip chilled cream until soft peaks form.
Gently fold in condensed milk and vanilla extract until smooth.
In serving glasses, layer crushed biscuits and cream mixture alternately.
Finish with a top layer of biscuit crumbs.
Refrigerate for at least 3–4 hours before serving.
