With a texture that is buttery and chewy, the Goan perad or guava cheese is a celebrated delicacy to share with loved ones during the holiday season or for Christmas. Made using fresh guava that is in season during this time, relish the preparation as it is or in a grilled cheese sandwich.
2 large pink guavas, ripened 1 tablespoon beetroot puree 2-3 tablespoons butter 1.5 cups sugar
Quarter the guavas and steam them in a pressure cooker until they soften.
Blend into a pulp once cooled and strain it to discard any seeds that remain.
Add the smooth puree to a non-stick pan and cook along with the sugar, stirring continuously until it thickens.
Add a couple of tablespoons of butter along with the beetroot puree while stirring, cooking further for 3-4 minutes.
Finish with another tablespoon of butter, before letting it set in a greased tray or plate for 3-4 hours.
Cut into diamond-shaped pieces and refrigerate for upto 2 weeks.
