Are you craving something flavourful and crunchy to munch on in the evenings? Instead of getting your go-to bag of chips that is laden with preservatives, try this protein-packed quinoa bhel recipe at home.
1 cup quinoa 1.5 cups water ½ cup onion 1 cup cucumber ½ cup cherry tomatoes ½ cup cooked chickpeas ¼ cup cilantro ¼ cup mint 2 tablespoons roasted peanuts 1 tablespoon tamarind chutney 1 tablespoon green chutney 1 tablespoon lemon juice ½ teaspoon chaat masala Salt to taste
Mix quinoa and water, and boil till the quinoa is fluffy. Turn off the heat.
Chop onion, cucumber, and cherry tomatoes. Mix in fluffed quinoa.
Add cooked chickpeas, cilantro, mint, and roasted peanuts.
Combine with imli chutney, green chutney, and lemon juice.
Sprinkle chaat masala and toss till well combined. Serve immediately.
