Missi roti can be prepared gluten-free when made from besan and millet flour. Rich in protein and fibre, missi roti pairs beautifully with everyday sabzi, curd or even chutney.
1 cup besan (gram flour) ½ cup jowar flour ¼ cup rice flour 1 small onion, finely chopped 2 tablespoons coriander leaves, chopped 1 green chilli, finely chopped ½ teaspoon ajwain ½ teaspoon turmeric powder ½ teaspoon red chilli powder ¾ teaspoon salt 1 tablespoon oil or ghee ¾ cup warm water (approx.) Ghee or oil for roasting
In a bowl, mix besan, jowar flour and rice flour. This will make a gluten-free base for the roti.
To this, mix onion, coriander, green chilli, ajwain, turmeric, chilli powder and salt.
Now, add oil and warm water slowly and mix everything to make a soft dough.
Take a portion of the dough and flatten it gently with a rolling pin between parchment sheets or with wet hands.
Place the roti on a hot pan and cook both sides until golden spots appear on both sides.
Serve the hot missi roti with curd, pickle or sabzi to have maximum taste.
