Millet cookies are a wholesome, crunchy snack made with millet flour, butter or ghee, and natural sweeteners. They’re a healthy alternative to regular cookies, perfect with tea or coffee.
1 cup millet flour ½ cup whole wheat flour ½ cup brown sugar ½ cup butter ¼ tsp baking soda 1 tsp vanilla extract 2–3 tbsp milk
In a bowl, cream butter, brown sugar until fluffy, and add vanilla extract.
Sift the millet flour, wheat flour, and baking soda together, then combine with the creamed mixture.
Add a little milk if needed, then shape the dough into small balls, flatten them slightly, and arrange on a greased baking tray.
Bake in a preheated oven at 170°C for 12–15 minutes or until edges turn golden.
Let cookies cool on a wire rack; they crisp up as they cool.
