Sabudana idli is a soft, fluffy, and healthy twist to traditional idlis. It is light on the stomach, rich in carbohydrates and a perfect gluten-free alternative and makes a favourite dish for both adults and children.
1 cup sabudana 1 cup idli rava 1 cup curd ½ cup water To taste salt ½ tsp fruit salt Oil as required for greasing Optional tempering 1 tsp ghee ½ tsp mustard seeds 1 finely chopped green chilli 6-8 curry leaves 6-8 broken cashews
Wash sabudana 2-3 times and soak it in water for 4-5 hours until soft and drain excess water.
In a bowl, mix soaked sabudana, idli rava, curd, salt and add gradually to get a thick batter, let it rest for 30 minutes.
Heat ghee in a pan, add mustard seeds, curry leaves, green chilli, cashews and pour this tempering into the batter and mix well.
Just before steaming, add fruit salt (Eno) and gently mix.
Grease idli moulds, pour the batter, and steam for 10-12 minutes on medium flame until a toothpick comes out clean
Serve hot with chutney and sambar.
