All pasta sauces taste equally heavenly, but there is something about well-cooked white pasta with Indian masalas and spices that can make you forget all your day's woes!
1 cup of boiled pasta 1 ½ cups of whole milk (room temperature preferred) 1 ½ tbsp all-purpose-flour 2 tbsp of butter ¼ chopped carrots ½ cup boiled corn kernels ⅛ cup of green peas ¼ cup of capsicum ¼ cup of bell peppers ½ tbsp refined oil (less scented oil) 2 garlic cloves, finely chopped ½ tbsp oregano 1 tbsp chilli flakes Cheese Salt to taste Black pepper to taste
Take a non-stick pan and heat oil over a medium flame. Add carrot, bell pepper, capsicum, peas, and corn kernels.
Sauté the vegetables for 5-6 minutes. Take them from the pan and keep them aside.
In the same pan, add butter, and as soon as the butter melts, add garlic. Sauté it for 20-30 secs.
Add all-purpose flour slowly. Mix it with the garlic-butter mixture until it loses the raw smell.
Turn down the flame to low heat and start pouring milk in batches so that there aren’t any lumps in the mixture.
Once smooth, add cheese to the sauce. Let it cook. Add salt, black pepper, chilli flakes and oregano. Mix it well.
Turn off the heat. Add boiled pasta and veggies into the white sauce. Mix everything and close the lid.
