Ghughni chaat is an Eastern Indian street food commonly found in West Bengal, Odisha, and Bihar. It is a spicy, tangy, and hearty dish made from dried peas simmered in a flavourful gravy and topped with fresh veggies.
2 cups dried white peas 1 diced potato 1 bay leaf 2 cloves ½ cinnamon stick ½ tsp turmeric ½ tsp cumin seeds 1 cup onions 1 cup chopped tomatoes 1 tsp minced ginger 2 chopped green chillies 3 tbsp tamarind pulp 1 tsp chaat masala Spices: 1½ tsp red chilli 1 tsp cumin powder ½ tsp garam masala Chopped cilantro Salt Lemon juice for garnish
Soak the peas overnight and then pressure cook them with potatoes, bay leaf, cloves, cinnamon, cumin, turmeric, and water until soft.
Saute onions and oil, add tomatoes, ginger, green chillies, tamarind, and spices. Cook until it turns thick
Mix the cooked peas with masala and simmer.
Top it with chutney, onions, cilantro, and sev and squeeze some fresh lemon juice on it.
