One of the reasons why foodies look forward to the monsoon is ghevar. The sweet disc boasting a web-like structure is everyone’s weakness. Here is how you can make it at home.
4-6 ice cubes ½ cup ghee 1 tsp lemon juice 1 cup maida Ghee for frying ¼ cup chilled milk 2-3 cups ice cold water ¾ cup water 1.5 cups sugar A few saffron strands 3-4 cardamom pods
Take a large bowl, and combine ghee and ice cubes. Rub it vigorously until it turns white, creamy, and frothy.
Slowly add milk and maida into the bowl. Whisk the ingredients into a smooth, lump-free batter.
Add lemon juice to the batter to amplify crispiness. Refrigerate the batter to chill it.
Meanwhile, prepare the sugar syrup in a saucepan. Turn the flame low.
Keep a hollow cylinder in the middle of a kadhai with hot oil. Drop batter and fry it into a disc.
Immerse the ghevar in sugar syrup and keep it aside for a while. Enjoy it every day.
