What can be better than having your favourite pancakes with a hint of fibre? Start your day on a healthy note with these soft, fluffy, fibre-rich banana oat pancakes topped with fresh fruits, nuts, yoghurt, or a drizzle of honey.
1 cup oats flour 2 eggs 1⁄2 cup milk 1 banana 1 teaspoon baking powder 1⁄2 teaspoon cinnamon 1 teaspoon vanilla extract Butter for cooking
Add oats, eggs, banana, milk, baking powder, vanilla essence and cinnamon to a blender. Blend until it reaches a smooth consistency.
Allow the batter to rest for 5–10 minutes so the oats thicken slightly by absorbing the liquid.
Heat a lightly oiled non-stick pan over medium heat. Pour some batter onto the pan and cook until bubbles appear.
Flip the pancakes gently and cook the other side until golden brown and fully cooked.
Plate the pancakes and top with honey, berries, bananas, nuts, or a dollop of yoghurt. Enjoy Warm!
