Gauri Vrat is a sacred festival dedicated to Goddess Parvati, observed primarily through devout fasting. Traditional broken wheat lapsi is restricted during vrat, making rajgira or amaranth flour the ideal farali substitute for creating a rich, sweet porridge. Slow roasting the gluten-free amaranth flour in pure ghee releases a deep, nutty aroma before it simmers with hot water and unrefined jaggery. Fragrant with cardamom and loaded with crunchy dry fruits, this comforting farali lapsi provides clean energy and tradition during festival days.

Ingredients

 1 cup rajgira flour (amaranth flour)  4 tablespoons pure ghee  2 cups hot water  3/4 cup jaggery powder  1/2 teaspoon cardamom powder  2 tablespoons chopped almonds and cashews

Step 1

Heat the ghee in a heavy-bottomed pan over medium-low heat, add the rajgira flour, and roast continuously for 6 to 8 minutes until it turns light golden and aromatic.

Step 2

Carefully pour the hot water into the roasted flour while stirring constantly with a whisk to prevent any lumps from forming.

Step 3

Cook the mixture on low heat for 4 to 5 minutes until the flour absorbs the water and thickens into a soft porridge.

Step 4

Stir in the jaggery powder, cardamom powder, and chopped nuts, simmering for another two minutes until the jaggery melts completely and the ghee begins to separate at the edges.
