A healthy twist on the classic carrot dessert, this halwa uses jaggery instead of sugar. Slow-cooked with milk, ghee, and aromatic cardamom, it’s rich, naturally sweet, and comforting.
2 cups grated carrots 1 cup grated or powdered jaggery 2 cups milk 2 tbsp ghee 4-5 cardamom pods, crushed 2 tbsp chopped nuts (cashews, almonds, pistachios)
Cook grated carrots with milk on medium flame until soft, and milk is absorbed (20-25 mins).
Add jaggery, stirring continuously until melted.
Mix in ghee, cardamom, and nuts. Cook 5-7 mins until thick.
Serve warm, garnished with extra nuts.
