Colourful layers of sponge cake, creamy ice cream, crunchy nuts, and tutti frutti make this cassata ice cream cake recipe a nostalgic frozen dessert that feels perfect for birthdays, summer celebrations, family gatherings, and late-night sweet cravings with loved ones everywhere.

Ingredients

1 vanilla sponge cake 2 cups vanilla ice cream 2 cups strawberry ice cream 2 cups pistachio ice cream 1/4 cup tutti frutti 1/4 cup chopped almonds 1/4 cup chopped pistachios 2 tbsp rose syrup 1/2 cup whipped cream

Step 1

Slice the sponge cake into thin layers and line a loaf tin with butter paper.

Step 2

Spread vanilla ice cream over one cake layer and freeze for 20 minutes.

Step 3

Add strawberry and pistachio ice cream layers with nuts and tutti frutti between them.

Step 4

Cover with the final cake layer, drizzle rose syrup, and freeze overnight.

Step 5

Demould the cassata ice cream cake, decorate with whipped cream and nuts, then serve chilled.
