Moong dal vada is a crispy snack that goes well with evening tea. You can dip them in sambar or rasam and enjoy them for dinner, or you can pair the chutney of your choice for breakfast. Try this quick recipe.
1 cup green moong dal 1 tsp coriander, fennel seeds 1 tsp chilli powder, hot oil ½ tsp pepper, cumin seeds 3-4 garlic cloves 1-inch ginger 2 chopped green chillies 1 medium onion ½ cup coriander leaves Salt to taste ½ tsp amchur powder 2 tbsp besan ¼ tsp baking soda Oil for deep frying A pinch of hing ¼ cup methi leaves
Soak moong for 3-4 hours and grind it into a paste along with garlic, green chillies, ginger, cumin seeds, coriander seeds, and fennel seeds.
Add powdered spices, including pepper, red chilli powder, amchur powder, and hing.
Drop in coriander leaves, methi leaves, and chopped onion.
Add salt to taste, besan, and soda. Adjust the consistency with water.
Drop small balls of this mixture into hot oil and fry vadas until they are crispy.
Serve moong dal vadas with green coriander chutney, sambar, coconut chutney, or rasam.
