The hot, crispy chips absorb the runny yolk, creating a texture that is simultaneously soft and crunchy. 2 large eggs  1 large handful of high-quality salted potato chips  1 tsp butter  Black pepper and paprika for seasoning  Fresh chives or spring onion greens for garnish
Spread the potato chips on a heat-proof serving plate.
Melt the butter in a non-stick pan and fry the eggs until the whites are set but the yolks remain liquid and runny.
Carefully slide the fried eggs directly onto the bed of potato chips.
Season with black pepper and paprika, garnish with chopped chives, and serve immediately while the chips are still warm and crisp.
