Fresh Corn Chevdo Recipe: A Creamy And Spiced Monsoon Snack Made From Scratch

Rainy afternoons naturally create a craving for warm and savoury snacks that are quick to prepare in a home kitchen. Corn chevdo is a comforting dish that transforms sweet corn on the cob into a rich and mildly spiced mash. Grating fresh corn releases its natural starches to create a thick base that absorbs the flavours of ginger, green chillies, and mustard seeds perfectly. Cooking this mixture in milk gives it an incredibly soft and creamy texture that melts in the mouth. Garnished with freshly grated coconut and fresh coriander, it provides a hearty bite that perfectly complements the cool monsoon breeze.

Ingredients

 4 fresh ears of sweet corn, grated  1 cup whole milk  2 tablespoons vegetable oil  1 teaspoon mustard seeds  1 teaspoon ginger and green chilli paste  1/2 teaspoon turmeric powder  2 tablespoons fresh grated coconut  Fresh coriander leaves, finely chopped  Salt to taste

Step 1

Heat the vegetable oil in a heavy-bottomed pan over medium heat and add the mustard seeds, letting them crackle fully to release their aroma.

Step 2

Stir in the ginger and green chilli paste along with the turmeric powder, cooking gently for a few seconds before adding the grated sweet corn to the pan.

Step 3

 Sauté the corn mixture for five minutes until it turns slightly glossy, then pour in the whole milk and season with salt.

Step 4

Cover the pan and let it simmer on low heat for 10 minutes until the milk is fully absorbed and the mixture becomes thick and creamy, then serve hot topped with fresh coconut and coriander.
