Avocado salad is a fresh, vibrant, and nutrient-packed dish made with creamy avocados, juicy tomatoes, crunchy cucumbers, and zesty lemon dressing. Loaded with healthy fibres, fats and antioxidants, this salad is not only delicious but also supports heart health.

Ingredients

2 cubed ripe avocados 1 cup halved cherry tomatoes ½ sliced cucumber ¼ cup thinly sliced red onion 2 tbsp fresh lemon juice 1 tbsp olive oil 2 tbsp chopped fresh coriander Salt & black pepper to taste

Step 1

In a large bowl, add avocado cubes, cherry tomatoes, cucumber, and red onion.

Step 2

Drizzle with lemon juice and olive oil.

Step 3

Sprinkle salt and black pepper to taste.

Step 4

Gently toss everything together, taking care not to mash the avocado.

Step 5

Garnish with chopped coriander and serve.
