French onion soup is a slow-cooked, deeply flavoured broth made with caramelised onions, stock, and topped with bread and melted cheese. It is rich, warm, and a timeless favourite.
4 large onions (thinly sliced) 2 tbsp butter 1 tbsp olive oil 1 tsp sugar 1 tsp salt ½ tsp black pepper 4 cups vegetable or chicken stock 1 bay leaf 1 tsp thyme 4 slices baguette bread ½ cup grated cheese (gruyère or mozzarella)
Heat butter and oil in a pan, add onions and cook slowly until caramelised and golden. Add sugar, salt, pepper, bay leaf, and thyme. Stir well.
Pour in stock, bring to a boil, then simmer for 20–25 minutes. Toast bread slices, sprinkle cheese on top, and grill until melted.
Serve hot soup in bowls with cheesy bread placed on top.
