Pista barfi is a classic sweet recipe that can be made for festivals, special occasions, or even every day. These handcrafted treats are simple to prepare. They have a long shelf life and can be stored for days in an airtight container.
2 cups of pistachio powder 1½ tablespoons of ghee ¾ cups of sugar 2 tablespoons of milk 2 tablespoons of liquid glucose Silver vark, for garnish, optional
Put some ghee on a baking tray. Grease the tray properly.
In a non-stick skillet, heat sugar with water until the sugar dissolves.
Add milk and whisk it. Remove any scum that appears on top. Cook until it thickens.
Add the liquid glucose and thoroughly mix it. Add another spoon of ghee.
Next, add in the pistachio powder until a lump forms. Place the mixture in a bowl and give it some time to cool.
Put some ghee on your hands and gently knead the mixture. Then spread it uniformly throughout the barfi tray.
Garnish with silver vark and let it cool to room temperature. Cut them into diamonds, and serve.
