Malabari parathas are essentially laminated flatbreads made using all-purpose flour and plenty of oil to produce a crisp-chewy medley of textures. Belonging to the northern Kerala region where meat-based curries are commonplace, these parathas offer a neutral base to soak up flavour while also contributing texture to a meal.
2 cups all-purpose flour ¾ cup lukewarm water 2 teaspoons sugar ½ teaspoon salt ½ cup vegetable oil
Combine the dry ingredients in a mixing bowl before gradually pouring in the lukewarm water and kneading for 12-14 minutes, until a smooth dough ball is formed.
Drizzle some oil in the bowl and place the ball of dough to rest for 45-60 minutes.
Divide it into 6-8 equal portions and shape into round balls before rolling each one into a thin sheet.
Use a knife and cut the sheet into strips before layering it on top of the other and forming a shaggy disc.
Drizzle some oil over it and rolling again into a flatbread before cooking on a hot pan for 2-3 minutes on both sides.
Drizzle more oil to crisp up the outer layers until they turn golden-brown and flaky.
Transfer to a plate and crush slightly using your hands before serving hot.
