Quinoa salad is a fibre-rich delight loaded with vegetables and packed with zesty flavours. Its crumbly texture gives you a nice mouth feel. Here is a recipe that you will replicate in your kitchen again and again.
1 cup quinoa 1.75 cups water 1 tsp mushroom bouillon 1 cucumber, carrot, celery stalk ½ red, yellow, orange peppers ½ cup corn, edamame beans 2 tsp oregano ½ tsp salt ⅓ cup olive oil, lemon juice Fresh ground pepper 1 tbsp honey 1 clove minced garlic
Use a small pan and combine bouillon powder and water in it. Bring it to a boil and stir the quinoa.
When the liquid evaporates, remove the quinoa from the stove and let it stay covered for 10 minutes.
Fluff the quinoa and add edamame beans to it. Meanwhile, combine pepper, garlic, oil, lemon juice, and honey to prepare the dressing.
Chop the vegetables and toss them in a bowl with quinoa and dressing.
Adjust the seasoning of the quinoa salad and serve it immediately.
