Oats dosa is a quick, healthy breakfast that is light and also filling. It is perfect for busy mornings, and can be made without fermentation, giving you a crisp, flavourful start to the day.
1 cup oats (powdered) ½ cup rice flour ½ cup curd 1–1½ cups water 1 small onion (finely chopped) 1–2 green chillies (chopped) 1 tsp ginger (grated) 1 tbsp coriander leaves (chopped) Salt to taste Oil for cooking
Grind the oats to a fine powder so there are no coarse bits, so the dosa batter turns smooth while making.
In a bowl, mix the ground oat powders with the rice flour and curd, then slowly add water, and whisk well to make a smooth, a bit thin lump-free batter.
To the batter, add the chopped onions, green chillies, grated ginger, coriander, and salt and mix everything well.
Keep the batter resting for about 10 to 15 minutes, so that the oats absorb the moisture, which helps to improve texture, and the batter will spread smoothly.
Heat the dosa pan, lightly grease it, then pour a ladleful of batter and spread it gently into a thin circle. Drizzle with a little oil around the edges.
Cook until the edges turn crisp and golden, then flip if required or serve directly with coconut chutney or mint chutney.
