Boondi laddu is an Indian sweet made with fried besan mixed in sugar syrup, which is popularly made for festivities. If you want to try your hand at making these laddus at home, this guide is all you need.
1.5 cups besan 1 cup water ½ teaspoon cardamom powder 1 tablespoon ghee, for frying Oil for deep frying 1.5 cups sugar 1 cup water 1/4 teaspoon cardamom powder 2 tablespoons cashews 2 tablespoons pistachios
Sift besan into a large bowl. Gradually add water for a consistent batter.
Heat some oil and pour the batter through a perforated spoon, creating tiny droplets.
Fry until golden brown, then drain on paper towels. Repeat with the remaining batter.
In a separate pan, combine sugar and water. Simmer for a few minutes till the syrup thickens.
Add the fried boondi, cashews, and pistachios to the warm sugar syrup. Mix well.
Shape balls out of the mixture, and the laddus will be ready to serve.
