Ingredients

700 g chicken with bones (thighs or drumsticks) 1 tbsp oil or butter 1 onion, roughly chopped 2 cloves garlic, crushed 1 inch ginger, sliced 1 carrot, sliced 1 celery stalk, sliced 6 cups water 1 tsp salt, adjust to taste ½ tsp freshly ground black pepper Fresh coriander or parsley

Step 1

Heat oil or butter in a heavy pot and sauté onion until soft.

Step 2

Add garlic and ginger, followed by chicken pieces, and cook briefly to seal.

Step 3

Add vegetables, water, salt, and pepper and bring to a boil.

Step 4

Lower heat and simmer uncovered for 40–45 minutes, skimming if needed
