Golden, crunchy falafel recipe made from soaked chickpeas delivers strong herbaceous flavours and a fluffy centre. Perfect for wraps, mezze platters, or quick snacks, these bites bring authentic street-style character straight into your kitchen.
1 cup dried chickpeas (soaked overnight) ¼ cup chopped parsley ¼ cup chopped coriander 3 garlic cloves 1 small, roughly chopped onion 1 tsp cumin powder 1 tsp coriander powder ½ tsp baking soda 2 tbsp flour Salt to taste Oil for frying
Drain soaked chickpeas completely and blend with onion, garlic, parsley, and coriander into a coarse mixture without adding water.
Add cumin, coriander powder, salt, flour, and baking soda; pulse again until the mixture holds shape.
Rest the mixture for 15 minutes so flavours combine and texture firms slightly.
Shape into small balls or patties and fry in medium-hot oil until deep golden and crisp outside.
Drain on paper towels and serve warm inside pita, wraps, or with tahini sauce.
