Experience Traditional Bihari Cuisine With Homemade Litti Chokha Recipe

Litti chokha is a rustic Bihari dish made from whole wheat dough balls stuffed with spiced sattu and traditionally roasted over coal or wood fire. The smoky litti pairs with chokha made from roasted eggplant, tomato and potato mashed with mustard oil. Sattu is rich in plant protein and fibre, making the dish nourishing and filling. Traditionally served with melted ghee, it remains one of Bihar’s most iconic regional meals.

Ingredients

For Dough 2 cups whole wheat flour 2 tbsp oil Salt to taste Water as needed For Filling 1 cup sattu 1 tbsp mustard oil 1 tbsp lemon juice 1 tsp roasted cumin powder 1 finely chopped green chilli Salt to taste For Chokha 2 large eggplants 2 boiled potatoes 2 roasted tomatoes 1 tbsp mustard oil 1 small onion finely chopped Fresh coriander Salt to taste

Step 1

Combine flour, oil, salt and water to form a firm dough and let it rest for fifteen minutes.

Step 2

Mix sattu with mustard oil, lemon juice, cumin, chilli and salt to prepare a slightly moist stuffing.

Step 3

Divide the dough into portions, fill each with sattu mixture and seal carefully into round balls.

Step 4

Roast in a preheated oven at 200°C or over open flame until evenly browned and cooked through from inside.

Step 5

Roast eggplant and tomatoes directly over flame until charred, then peel and mash with boiled potatoes.

Step 6

Mix the chokha with mustard oil, onion, coriander and salt and serve hot with litti and optional melted ghee.
