Pumpkin sambar is a slightly sweet and tangy preparation of the South Indian staple, not to mention its lip-smacking taste. If you are tired of replicating the regular recipe, you can add a twist with this one. Follow this guide.
A sprig of curry leaves ½ cup toor dal 1 tsp turmeric, jaggery 2 cups water ½ pumpkin 2 slit green chillies 1 tsp mustard, cumin seeds 2 tbsp coriander leaves 2 tbsp tamarind pulp 2 tsp red chilli, coriander Water, salt as needed 1 onion 1 tbsp oil, sugar ¼ tsp hing
Add dal, water, salt, and turmeric powder to a pressure cooker. Cook for 3 whistles.
Meanwhile, heat oil in a kadhai and add mustard seeds, cumin seeds, turmeric powder, curry leaves, and asafoetida.
Add onion slices and slit green chillies. Cook until the onions are golden brown.
Add pumpkin, salt, and sugar. Cook the ingredients until the pumpkin softens.
Pour the dal and tamarind pulp into the kadhai. Add water to adjust the consistency, and bring it to a boil.
Serve and enjoy pumpkin sambar with rice, dosa, vada, and idli.
