This low-fat version of carrot halwa retains all the flavour and sweetness of the traditional dish while being healthier and easier to digest.
4 cups grated carrots 2 cups low-fat milk 1/4 cup sugar 1/2 tsp cardamom powder 1 tbsp ghee 2 tbsp chopped nuts (almonds, pistachios, or cashews) 1 tbsp raisins
Heat a non-stick pan or kadhai. Add the grated carrots and sauté for 2-3 minutes until slightly softened.
Pour in the low-fat milk and cook on medium heat, stirring occasionally, until the milk reduces and thickens. This may take 15-20 minutes.
Add sugar and continue cooking until it dissolves and the mixture thickens further.
Mix in cardamom powder for aroma. If using, add 1 tbsp ghee for richness without much fat. Stir well.
Garnish with chopped nuts and raisins. Mix thoroughly and cook for another 2-3 minutes. Enjoy warm or chilled as a light, guilt-free dessert.
