The beauty of a shaken espresso lies in the aeration created by the vigorous mixing process. When you shake hot espresso with ice and a touch of brown sugar, it develops a thick, foamy layer that feels like a decadent coffee cream. Adding a splash of cold milk at the end creates a beautiful marbled effect that looks as good as it tastes.
2 shots of fresh, hot espresso  1 tsp brown sugar or maple syrup  1/2 cup cold milk of your choice  1 cup ice cubes
Pour the hot espresso and your chosen sweetener into a cocktail shaker or a sealed jar.
Add the ice cubes to the shaker and shake vigorously for 15 seconds until the outside of the shaker feels very cold and frosty.
Strain the mixture into a glass filled with fresh ice to keep the foam intact.
Top with the cold milk, letting it cascade through the foam for a perfectly layered look.
