Mawa samosas are a lesser-known but exquisite festive treat, featuring a crisp, golden pastry shell stuffed with a rich, decadent filling of reduced milk solids (mawa), nuts, and a hint of cardamom. Unlike the savoury versions, these are often lightly coated in sugar syrup or dusted with powdered sugar, making them a perfect dessert-style snack. They offer a luxurious crunch followed by a creamy, sweet centre that is sure to be the highlight of your dessert table.Ingredients
1 cup all-purpose flour (maida) mixed with 2 tbsp ghee  1/2 cup mawa (khoya), crumbled  2 tbsp powdered sugar  1/4 tsp cardamom powder  2 tbsp chopped nuts (cashews, pistachios, almonds)
Knead the flour, ghee, and water into a firm dough, cover, and let it rest for 30 minutes.
In a dry pan, lightly toast the mawa until aromatic, then remove from heat and stir in the powdered sugar, cardamom, and nuts.
Roll out small circles of the dough, place a teaspoon of the mawa filling in the centre, and fold into a triangle, sealing the edges firmly with a little water.
Deep-fry the samosas in medium-hot oil until golden brown and crispy, then drain and serve warm or at room temperature.
