Eid Al Adha or Bakrid celebrations often include a rich festive dessert spread, which is just why this chilled mango custard feels so satisfying, as the mango season is in full swing. Creamy custard, juicy mangoes and dry fruits, when blended, make a dessert that feels festive without being too heavy.

Ingredients

500 ml milk 3 tbsp vanilla custard powder 4 tbsp sugar 2 ripe mangoes, chopped ½ cup mango puree 2 tbsp chopped almonds 2 tbsp chopped pistachios 1 tbsp raisins ½ tsp cardamom powder Few saffron strands Mint leaves for garnish

Step 1

In a pan, heat milk and mix the custard powder in a separate bowl with a little cold milk to prevent the formation of lumps.

Step 2

Now, add the custard mixture slowly to the warm milk and mix it constantly until it thickens to make a smooth, creamy texture.

Step 3

Now, mix sugar, saffron and cardamom in the custard as these flavours give the dessert a light festive warmth.

Step 4

Let the custard cool down thoroughly before adding mango puree to it because hot custard can affect the freshness and natural sweetness of the ripe mangoes.

Step 5

Now, add the chopped mangoes, almonds, pistachios and raisins to the chilled custard so that every spoonful feels fruity, creamy, as well as a bit crunchy.

Step 6

Keep the mango custard in the fridge for at least two hours before serving so that it feels more refreshing and cooling.
