Also known as ‘tortilla de patata’ or ‘potato tortilla’, it’s basically an omelette with stuffed potatoes. It’s tangy, crispy and creamy and can be tweaked in your own way. It’s also Spain’s national dish! This easy recipe will flip your breakfast game to a whole new level.
½ cup of olive oil 200 grams of potatoes, thinly sliced 1 large onion, thinly sliced 4 eggs 2 tomatoes, chopped and seeds removed 2 green onions, chopped Salt and pepper to taste
Switch on the heat. Take a frying pan or skillet. Pour in the olive oil.
Once the oil is warm, add the potatoes, salt and pepper. Cook for 10-14 minutes until crispy and golden brown.
Next, add the onions. Cook them until they turn light brown
Whisk the eggs in a bowl. Add salt and pepper, chillies if you want.
Pour eggs into the pan or skillet. Reduce the heat to low. Gently stir and spread the eggs around. Keep cooking until the eggs turn brown.
Invert a plate over the omelette. Flip to the uncooked side. Place it back into the pan.
Remove from heat. Place it on the plate. Garnish with spring onions. Serve it hot.
