Eggs Kejriwal is a legendary Mumbai breakfast that elevates the humble fried egg into something truly spectacular. The foundation is a piece of buttery, toasted sourdough or crusty bread, slathered in a vibrant, spicy green chutney and topped with a perfectly cooked fried egg and melted cheese. It is a masterpiece of contrasts: the sharp heat of the chutney, the richness of the yolk, and the crunch of the toast come together to create a breakfast that feels both nostalgic and incredibly luxurious.
2 slices thick sourdough or crusty bread  2 large eggs  2 tbsp spicy green chutney (coriander, mint, chili)  2 slices of processed or cheddar cheese  1 tbsp butter  Thinly sliced red onions and chopped green chillies for topping
Toast the bread slices until golden brown and crisp, then spread a generous, thick layer of the spicy green chutney over each slice.
Fry the eggs in butter, ensuring the whites are set and crispy at the edges while the yolks remain perfectly runny.
Place a slice of cheese over each toasted bread slice, top with a fried egg, and add a few extra dashes of chutney or chopped chillies if desired.
Place the assembled toasts under a hot grill for 30 seconds just until the cheese is bubbling and melted, then serve immediately while the yolk is still liquid.
