Eggless Banana Bread Recipe To Spend Baking Over The Weekend

For most who prefer to enjoy their cakes without eggs, this banana bread recipe is an ideal one to relish with family and friends, accompanied by a cup of tea or coffee. Best enjoyed warm and toasted lightly with a smear of butter, this loaf cake is great even at room temperature or to make ahead of time and satiate sweet cravings.

INGREDIENTS

3 ripe bananas, mashed 8 tablespoons soft butter ½ cup Greek yoghurt 1 cup + 1 teaspoon sugar 2 cups all-purpose flour 1 teaspoon vanilla essence 1 teaspoon cinnamon powder 1 teaspoon baking powder 1 teaspoon baking soda ¾ cup chocolate chips ¼ teaspoon salt Butter, for greasing

STEP 1

Combine all the dry ingredients in a bowl and set aside while mixing together the bananas with Greek yoghurt, butter, sugar and vanilla essence.

STEP 2

Add the dry ingredient mixture to the wet ingredients and fold them in gently before tipping in the chocolate chips and mixing well again.

STEP 3

In a small bowl, combine the teaspoon of sugar with some cinnamon and set aside while pre-heating the oven to 163°C.

STEP 4

Grease a loaf pan with butter before transferring the batter into it and sprinkling the cinnamon-sugar mixture on top.

STEP 5

Bake for 65-70 minutes and use a toothpick to check for doneness before moving the loaf pan to a wire rack and cooling the bread completely.

STEP 6

Unmould, slice and serve warm with some butter or eat at room temperature as it is.
