On the hectic week days when you’re too busy to cook but also need a high-protein diet, egg curry is the perfect meal to prepare. Here’s a quick recipe to make egg curry, or anda curry, that you can try.
6-8 large eggs 2 tbsp ghee 1 onion (chopped) 1 tsp ginger-garlic paste 1 tbsp oil (for frying) 2 tomatoes 1/2 tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/4 cup yoghurt (optional) 1/2 cup water Salt to taste Coriander leaves (for garnish).
Boil the eggs, peel them, and lightly fry. Add a pinch of turmeric and red chilli powder and fry till golden.
Heat some ghee and saute onions. Add ginger-garlic paste and cook for a few minutes.
Add tomatoes, red chilli, coriander, and cumin powders. Whisk in yoghurt.
Add water and salt. Let the curry simmer. Gently add fried eggs and mix in garam masala.
After 5-10 minutes, garnish with coriander leaves and serve.
