Eggs are a staple across Indian households and work well in both light and filling breakfast dishes. They’re quick to cook, high in protein, and easily adaptable to different flavours. Here are five breakfast ideas using eggs that are easy to try and satisfying to eat.
Beat eggs with onion, tomato, green chilli, coriander, haldi, and a pinch of salt. Cook on a flat pan and serve hot with buttered pav. A Mumbai-style street favourite.
Prepare egg bhurji with mustard seeds, onion, tomato, chilli, and curry leaves. Wrap it in a chapati with a smear of green chutney for a filling breakfast on the go.
Whisk eggs with salt, pepper, and some chopped vegetables like spinach and carrot. Pour into greased steel katoris and steam for 10 minutes. Serve warm with toast.
Make a simple onion-tomato egg curry and serve it over plain poha instead of rice. It’s light, warm, and works well as a brunch too.
Cut a round in the centre of a slice of bread, place on a hot pan, and crack an egg in the middle. Toast both sides until the egg sets. Sprinkle pepper and serve.
