Egg Bhurji Recipe For A Protein Rich Breakfast Or Weeknight Meal

Egg bhurji is a simple Indian scramble cooked with onions, tomatoes and spices, making it both filling and quick to prepare. Cooking the onion–tomato base properly before adding the eggs ensures the flavours are well balanced. The eggs should remain soft rather than dry, giving the dish its comforting texture. It pairs easily with toast, pav or rotis.

Ingredients

4 eggs 1 medium onion, finely chopped 1 medium tomato, finely chopped 1 green chilli, finely chopped ½ tsp turmeric ½ tsp red chilli powder Salt to taste Oil Fresh coriander

Step 1

Heat oil in a pan and sauté onions and green chilli until soft and lightly golden.

Step 2

Add tomatoes, turmeric, chilli powder and salt, cooking until the mixture turns soft and slightly glossy.

Step 3

Beat the eggs lightly and pour them into the pan, stirring gently until just set but still moist.

Step 4

Finish with chopped coriander and serve hot with pav or bread.
