Egg akuri is a Parsi dish made with scrambled eggs cooked alongside onions, tomatoes, chillies, and spices. It is softer than regular scrambled eggs and is best eaten with pav or bread.
4 eggs 1 onion (finely chopped) 1 tomato (finely chopped) 2 green chillies (chopped) 1 tsp ginger-garlic paste 2 tbsp oil or butter ¼ tsp turmeric powder ½ tsp red chilli powder ½ tsp cumin seeds Salt to taste Fresh coriander leaves for garnish
Heat oil or butter in a pan. Add cumin seeds, onion, and green chillies, and sauté until onions are soft.
Stir in ginger-garlic paste, tomato, turmeric, and red chilli powder. Cook until tomatoes soften.
Beat eggs lightly and pour into the pan. Stir continuously on low heat until the eggs are soft and slightly runny.
Garnish with coriander and serve immediately with pav or bread.
