2 cups fresh watermelon (cubed and chilled) 10-12 fresh mint leaves 1/2 lime, cut into wedges 1 tsp honey or agave (optional) Club soda to top Ice cubes
Muddle the mint leaves and lime wedges in a sturdy glass to release the aromatic oils.
Blend the watermelon cubes until smooth. You can strain the juice for a clear cocktail or keep the pulp for added fiber.
Pour the watermelon juice into the glass over ice, add your sweetener, and stir gently.
