This classic Italian starter features a vibrant topping of juicy, ripe tomatoes tossed with fragrant fresh basil and premium extra virgin olive oil, mounded high onto crisp, garlic-rubbed grilled bread. The key to unlocking its full flavour profile lies in letting the tomatoes marinate briefly at room temperature, allowing their natural juices to mingle into a rich, savoury dressing that softens the crunchy toast beautifully.
4 large ripe plum tomatoes, deseeded and finely diced  2 cloves garlic (one minced, one halved to rub the bread)  1/4 cup fresh basil leaves, finely sliced  3 tbsp premium extra virgin olive oil  1 crusty sourdough loaf, sliced into thick rounds  Salt and freshly cracked black pepper to taste
Combine the finely diced tomatoes, minced garlic, premium extra virgin olive oil, and sliced fresh basil leaves in a medium bowl, tossing gently to combine.
Season the tomato mixture with salt and black pepper, then let it sit at room temperature for 10 minutes to allow the natural juices and flavours to marry beautifully.
Toast the sourdough bread slices on a hot griddle pan for 2 to 3 minutes on each side until deeply golden with sharp, smoky char marks.
Rub the cut side of the halved garlic clove firmly across the hot surface of each toast to infuse the aroma, then spoon the marinated tomatoes generously over the top and serve immediately.
