Sweet corn kernels add a natural sweetness to your bowl filled with soup. Whether you’re feeling under the weather or simply want to snuggle in your blanket, try this quick, sweet corn soup recipe.
4 large sweet corn cobs 1 tablespoon butter 1 onion, chopped 2 cloves garlic, minced 4 cups vegetable broth 1 cup heavy cream Salt and pepper to taste
Cut the kernels from the cobs and set them aside.
Add onion and garlic to a large pot, and melt some butter.
Stir in corn kernels and vegetable broth. Bring to a boil and let the soup simmer.
Puree the soup with a blender and stir in heavy cream.
Season with salt and pepper and serve it hot.
