This street-style potato sandwich is a masterclass in texturesâsoft, spiced mashed potatoes, crisp cucumber and tomato, and bread that has been griddled in enough butter to make it golden and jagged at the edges. It is a nostalgic, carb-on-carb comfort that hits the spot every time. The key lies in using a bold, green coriander-mint chutney that provides a sharp, herbaceous contrast to the rich, earthy potato masala.
4 slices white bread (thick cut is best)  2 boiled potatoes, mashed and seasoned with salt, turmeric, and chaat masala  1/2 cucumber, sliced into thin rounds  1/2 tomato, sliced into thin rounds  2 tbsp green chutney (coriander, mint, chili, and lemon)  3 tbsp salted butter (room temperature)
Spread a generous layer of green chutney on one side of each bread slice, ensuring you cover the corners for maximum flavour.
Spread the seasoned potato masala evenly over two of the bread slices, top with the cucumber and tomato rounds, and close the sandwich with the remaining slices.
Apply a thick, even layer of butter to the outer sides of the sandwich, ensuring you coat the edges for a crispy finish.
Place the sandwich on a hot griddle or in a sandwich toaster, grilling until the bread is deeply toasted, golden brown, and the butter has soaked into the crumb.
