Easy Sprouts Curry For A Healthy Home-Cooked Meal

Sprouts curry is a nutritious and protein-rich dish made with sprouted lentils simmered in a spiced onion-tomato gravy. Packed with fibre and essential nutrients, it’s a wholesome option for lunch or dinner and pairs well with roti, rice, or even quinoa for a healthy twist.

Ingredients

1 cup mixed sprouts 1 finely chopped onion 1 chopped tomato 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala 2 tbsp oil Salt to taste 2 tbsp coriander leaves for garnish

Step 1

Heat oil in a pan and sauté onion till golden brown.

Step 2

Add ginger-garlic paste and cook for a minute.

Step 3

Mix in tomato, turmeric, red chilli powder, coriander powder and cook till tomatoes soften.

Step 4

Add sprouts and water, cover and simmer for 10-12 minutes till sprouts are cooked.

Step 5

Sprinkle garam masala, garnish with chopped coriander, and serve hot with roti or rice.
