Tomato rasam is a delicious South Indian stew made with ripe tomatoes, spices and curry leaves. It is a tangy classic, perfect to enjoy as a comforting bowl of soup or can be paired with steamed rice for a wholesome experience.
4 pureed ripe tomatoes 2 cups tamarind water 1 tsp rasam powder 1/2 tsp turmeric powder 1 tsp coarsely ground black pepper 1 tsp coarsely ground cumin seeds 3-4 crushed garlic cloves 1 tsp mustard seeds 2 dried red chillies A pinch of asafoetida 1 sprig curry leaves 2 tsp oil or ghee Fresh coriander leaves Salt to taste
Boil tomatoes in tamarind water, turmeric, salt, and simmer until the tomatoes soften.
Add rasam powder, pepper, cumin, garlic for flavour and simmer for 5-7 minutes.
Heat oil in a pan, splutter mustard seeds, add dry chillies, curry leaves and a pinch of asafoetida.
Pour the tempering into the rasam, stir well and garnish with fresh coriander leaves.
Serve as a hot, delicious soup!
