Sindhi Kadhi is a tangy and flavourful dish that even non-Sindhis love a lot. It is made with a combination of gram flour, tamarind, and a variety of vegetables. The regional dish is seasoned with a blend of spices and tempered with aromatic ingredients like cumin seeds and mustard seeds. Here’s a step-by-step recipe to make perfect Sindhi kadhi at home.
2 tbsp gram flour 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds A pinch of asafoetida 1/2 tsp turmeric powder 1 tsp red chilli powder 4-5 cups water 1/2 cup tamarind pulp Salt to taste 1 cup cubed carrots 1 cup drumsticks 1 cup cubed potatoes 10-12 pieces of okra
Begin by taking a deep pan, heat some oil, add mustard seeds, and let them crackle. Then add cumin seeds and asafoetida to it.
Add gram flour and roast it until it turns golden
Gradually add water while stirring to avoid lumps, then add turmeric, red chilli powder and salt. Let it simmer for 10 minutes.
Add the chopped vegetables to the kadhi, and simmer it until the vegetables get tender.
Mix in the tamarind pulp and simmer it for 5 minutes. Serve it with rice and roti.
